Food-grade Anhydrous Magnesium Sulfate (chemical formula MgSO) is a high-purity chemical that meets food safety standards such as GB 29207. It is mostly a white powder and possesses both food processing functionality and nutritional supplement value, making it widely used in the food industry.

1. Core Characteristics

· Physicochemical Properties: Odorless, salty and bitter taste, density approximately 2.66 g/cm³, melting point 1124(decomposes at this temperature); highly hygroscopic, readily soluble in water, ethanol, and glycerol, insoluble in acetone. Chemically stable, its aqueous solution is neutral, and it can provide magnesium and sulfate ions, forming precipitates with barium ions, etc.

· Stringent Safety Standards: Unlike industrial-grade products, it has extremely strict controls on hazardous substances. For example, arsenic content is typically limited to no more than 4 parts per million, and there are strict upper limits for heavy metals such as lead and mercury, as well as impurities such as microorganisms. The main content is generally 99%, and there are also clear regulations regarding moisture, chloride, and water-insoluble matter, complying with international and domestic standards such as Chinese GB 29207 and US FCC standards.

2. Major Applications in the Food Industry

· Solidifying and Stabilizing Agent: Adding this substance to the brine of pickled products such as cucumbers and canned vegetables allows magnesium ions to bind with pectin in vegetables, strengthening cell walls and preventing softening after processing, maintaining a crisp texture. It can also be used as an auxiliary coagulant in tofu making, helping soybean protein coagulate, although its usage frequency is lower than that of magnesium chloride and calcium sulfate.

· Nutritional Fortification Agent: Magnesium is an essential macromineral for the human body, related to heart health, bone strength, and nervous system function. It is often added to breakfast cereals, sports drinks, and milk powder to supplement the body with magnesium, especially suitable for special dietary foods; however, the amount added to infant formula must be strictly controlled according to regulations.

Brewing Processing Aids: Adding trace amounts of these aids during beer or synthetic sake brewing can replenish magnesium in the water, providing nutrients for yeast fermentation and enhancing fermentation capacity. In synthetic sake, adding them at a ratio of 0.002% can also improve the flavor of the beverage and help adjust the hardness of the brewing water, ensuring a stable brewing process.

3. Packaging and Storage Requirements

Packaging: Common packaging is 25kg/bag, often using an inner polyethylene plastic bag and an outer woven plastic bag. Customized kraft paper bags or paper drums are available upon request. The packaging will clearly label the product name, specifications, production date, etc., for easy traceability.

Storage: Store in a cool, dry, dark, and well-ventilated warehouse. The recommended storage temperature is no higher than 48. Avoid direct sunlight. Due to its hygroscopic nature, ensure the packaging is tightly sealed to prevent moisture absorption and clumping. Store separately from toxic and harmful substances and strong oxidizers. Mixing with other substances is strictly prohibited. The shelf life is typically 18 months.
